A deliciously creamy mash from Honestly Healthy.
380g sweet potato, peeled and cut into evenly sized cubes
1 tbsp coconut oil
1 tbsp nutritional yeast
1 tbsp tahini
3 tbsp water
Juice of 1/2 a lemon
5g chopped parsley
- Steam the sweet potatoes in a pan for around 10 minutes or until soft.
- Transfer the sweet potato to a bowl and roughly mash.
- Stir in the nutritional yeast and coconut oil.
- In a glass, whisk together your tahini, lemon juice and water until thick and creamy and then stir through the potatoes.
- Garnish with parsley.
