Fruit Sweetened Pistachio Cake

One of Jamie’s own favourite cake recipes. He uses less and less Sweet Freedom every time to reduce the sugar content.


200g pistachio
4 eggs
1/2 cup spelt flour
1 tbsp virgin coconut oil
Good squirt of Sweet Freedom


  • Preheat the oven to 160 degrees.
  • Grind the nuts up in a blender.
  • Mix everything together stick in a cake tin and bake for 35 mins. Voila! Particularly good served with CoYo natural yoghurt.
